Ingredients
1/2 cup shortening1 cup sugar2 large eggs, room temperature2 teaspoons vanilla extract2 cups all-purpose flour1 teaspoon baking soda1/2 teaspoon salt2 medium ripe bananas, mashed1 cup fresh blueberries
Preparation
Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy, 3-5 minutes. Beat in eggs and vanilla. Combine flour, baking soda and salt; gradually add creamed mixture, beating just until combined. Stir in bananas. Fold in blueberries.
Pour into 3 greased 5-3/4x3x2-in. loaf pans. Bake until a toothpick inserted in the center comes out clean, 40-45 minutes. Cool for 10 minutes before removing from pans to wire racks.
