Ingredients

1/4 cup canola oil2 tablespoons water2 tablespoons plus 1-1/2 teaspoons cider vinegarSugar substitute equivalent to 1 tablespoon sugar1-1/4 teaspoons poppy seeds3/4 teaspoon grated onion1/2 teaspoon ground mustard1/4 teaspoon salt4 cups torn romaine2 medium tart apples, chopped1 can (11 ounces) mandarin oranges, drained1/3 cup pecan halves, toasted1/2 cup crumbled blue cheese

Preparation

In blender, combine the first eight ingredients; cover and process until blended. In a large bowl, combine the romaine, apples, oranges and pecans. Add dressing and toss to coat; sprinkle with blue cheese.
