Ingredients

1 can (15 ounces) black beans, rinsed and drained1 cup frozen corn, thawed1 green pepper, diced1 sweet red pepper, diced1 cup diced red onion2 celery ribs, chopped3/4 cup cubed Monterey Jack cheese3 tablespoons lemon juice3 tablespoons red wine vinegar2 tablespoons olive oil2 garlic cloves, minced1 tablespoon Italian seasoning1 teaspoon pepper1/2 teaspoon ground cumin

Preparation

In a large bowl, combine the beans, corn, peppers, onion, celery and cheese. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over vegetable mixture and toss gently to coat. Cover and chill for 2 hours or overnight.
