Ingredients
1 can (15 ounces) black beans, rinsed and drained1 large egg, beaten1 cup shredded zucchini1/2 cup dry bread crumbs1/4 cup shredded Mexican cheese blend2 tablespoons chili powder1/4 teaspoon salt1/4 teaspoon baking powder1/4 teaspoon ground cumin2 tablespoons olive oilSALSA:2 medium tomatoes, chopped1 small green pepper, chopped3 tablespoons grated chocolate1 green onion, thinly sliced2 tablespoons minced fresh cilantro1 tablespoon lime juice1 to 2 teaspoons minced chipotle pepper in adobo sauce1 teaspoon honey
Preparation
In a small bowl, mash beans. Add the egg, zucchini, bread crumbs, cheese, chili powder, salt, baking powder and cumin; mix well.
Shape into 6 patties; brush both sides with oil. Place on a baking sheet.
Broil 3-4 in. from the heat until a thermometer reads 160°, 3-4 minutes on each side.
Meanwhile, in a small bowl, combine the salsa ingredients. Serve with black bean cakes.
