Ingredients

3/4 cup chopped celery1 medium onion, chopped1 tablespoon canola oil3 garlic cloves, minced3 cans (14-1/2 ounces each) chicken broth2 cans (15 ounces each) black beans, rinsed and drained1 jar (16 ounces) salsa1 cup cubed cooked chicken breast1 cup cooked long grain rice1 tablespoon lime juice1 teaspoon ground cumin

Preparation

In a large saucepan, saute celery and onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the remaining ingredients; heat through.
