Ingredients

1 can (16 ounces) great northern beans, rinsed and drained1 can (15 ounces) black beans, rinsed and drained1-1/4 cups chopped seeded tomato1-1/2 cups diced sweet red or yellow pepper3/4 cup thinly sliced green onions1/2 cup salsa3 tablespoons red wine or cider vinegar2 tablespoons minced fresh parsley or cilantro1/4 teaspoon salt1/8 teaspoon pepper

Preparation

In a large bowl combine the first five ingredients. In a small bowl, combine the salsa, vinegar, parsley, salt and pepper. Pour over bean mixture; toss to coat. Cover and refrigerate for at least 1 hour.
