Ingredients

4 cups cooked long grain rice8 radishes, sliced4 hard-boiled large eggs, chopped1 medium cucumber, seeded and chopped2 cups thinly sliced celery1/2 cup chopped onion1-1/2 cups mayonnaise3 tablespoons prepared mustard3/4 teaspoon salt

Preparation

In a large bowl, combine rice, radishes, eggs, cucumber, celery and onion. Combine mayonnaise, mustard and salt.

Pour over rice mixture; toss to coat. Cover and refrigerate at least 1 hour.
