1/4 cup reduced-fat mayonnaise1/4 cup chopped celery2 green onions, chopped2 tablespoons sweet pickle relish1 tablespoon Dijon mustard1/4 teaspoon ground turmeric1/4 teaspoon salt1/8 teaspoon cayenne pepper1 package (12.3 ounces) silken firm tofu, cubed8 slices whole wheat bread4 lettuce leavesCoarsely ground pepper, optional
Preparation
Mix first 8 ingredients; stir in tofu. Line 4 slices of bread with lettuce. Top with tofu mixture. If desired, sprinkle with pepper; close sandwiches.
