Ingredients
4 medium or 6 small zucchinis, finely chopped
1 medium yellow onion, finely chopped
1 red bell pepper, finely chopped
1 orange bell pepper, finely chopped
3 tbsp. kosher salt or pickling salt
2 c. apple cider vinegar
1 c. granulated sugar
2 tsp. mustard seeds
2 tsp. ground turmeric
1 tsp. coriander seeds
1/2 tsp. crushed red pepper flakes
Preparation
Step 1Combine zucchini, onion, and peppers in a large bowl and toss with salt. Cover vegetables with cold water and let soak for 2 hours. Step 2When 2 hours have passed, drain and rinse vegetables. In a large sauce pan over medium heat, combine vinegar, sugar, mustard seeds, turmeric, coriander, and red pepper flakes and bring mixture up to a boil. Add drained vegetables and reduce to a simmer.Step 3Cook, stirring occasionally, for 10 to 12 minutes. Transfer to clean jars, let cool, and refrigerate.
