Ingredients
20 cut in half diagonally
vegetable oil
kosher salt
Freshly ground pepper
1 red bell pepper, sliced into thin strips
2 garlic cloves, minced
2 c. shredded rotisserie chicken
2 tbsp. hoisin sauce
3 tbsp. honey
1/4 c. soy sauce
2 tbsp. lime juice
1/2 c. pickled jalapeños
1/2 c. Shredded Monterey Jack
1 red onion, thinly sliced
1 avocado, sliced
1/4 c. Chopped cilantro
Preparation
Step 1Preheat oven to 375 degrees F.Step 2Make wonton chips: Divide wonton triangles between two large rimmed baking sheets, keeping the wontons in a single even layer. Brush both sides of the wontons with oil, then season the tops with salt and pepper. Bake until golden, about 10 minutes. Let cool while you prepare the topping.Step 3Make chicken topping: Heat about a tablespoon of vegetable oil in a large nonstick skillet over medium heat. Add bell peppers and sauté until soft. Stir in garlic and cook until fragrant, about 30 seconds. Add the chicken and toss until combined. Pour in hoisin sauce, honey, soy sauce and lime juice. Toss everything to combine and bring mixture to a simmer. Reduce slightly. Season to taste with salt and pepper and remove from heat.Step 4Spread the chicken mixture over one baking sheet filled with wonton chips. Top with about half of the shredded, red onions and pickled jalapeños. Add another layer of chips and repeat. Bake for about 10 minutes, until melty.Step 5Garnish with avocado and cilantro.
