Ingredients

1/2 c. wild rice

2 1/2 c. water, plus more for soaking rice

Kosher salt

1/4 c. chia seeds

1/4 c. plus 1 tablespoon maple syrup, divided, plus more for serving

Fresh berries, for serving

Sunflower seeds, for serving

Preparation

Step 1Add wild rice to a medium sauce pan and cover with cold water. Soak uncovered for 15 minutes.Step 2Transfer rice to a strainer and rinse until water runs clear.Step 3Add 2 cups of water and a pinch of salt to sauce pan over medium heat. Bring to a boil.Step 4Add rice, cover  and cook on low for 25 to 30 minutes, or until the rice opens. Add extra water if necessary, and set aside to cool for 10 to 15 minutes before blending.Step 5Meanwhile, bloom chia: in a medium bowl, combine chia seeds, 1/2 cup water, and 1 tablespoon maple syrup. Stir to combine and let sit until jelled, 5 to 10 minutes. Step 6When rice has cooled, transfer to food processor or blender with 1/4 cup maple syrup, and pulse until well blended. Add Chia mixture and blend until just combined, then transfer to the refrigerator to set for at least 30 minutes.Step 7Toast sunflower seeds and toss with berries, along with more maple syrup, if desired. Serve pudding topped with seeds and berries.
