Ingredients
8 frozen waffles
8 slices bacon
8 large eggs, whisked
1 c. shredded white Cheddar
kosher salt
Freshly ground black pepper
Warm maple syrup, for drizzling
Preparation
Step 1Preheat oven to 350°. Microwave waffles for 25 seconds (they should be pliable but not fully cooked).Step 2Place waffles between slots in a flipped-over muffin tin and bake until they hold their shape, 5 minutes.Step 3Meanwhile, in a large skillet over medium heat, cook bacon until crispy. Transfer to a paper towel-lined plate to drain. Once cool, break in half. Drain half the fat in skillet.Step 4Add eggs to skillet and cook, stirring occasionally, until mostly scrambled. Add cheese and stir until melted, then remove from heat and season with salt and pepper.Step 5Line each waffle with 2 halved bacon strips and top with eggs.Step 6Drizzle with maple syrup.
