Ingredients

3 c. all-purpose flour 

1 tbsp. granulated sugar

1 tbsp. baking powder

1 tsp. kosher salt 

1/2 c. (1 stick) cold butter, cut into cubes

Desired mix-ins

3/4 c. buttermilk, plus more as needed

2 large eggs

1/2 c. freshly grated Parmesan

1/2 c. freshly grated Pecorino

1 tsp. freshly ground black pepper

1 c. shredded mozzarella 

2 tbsp. thinly sliced basil

1 c. shredded cheddar

1/2 c. chopped cooked bacon

2 tbsp. sliced green onions or chives 

1 c. crumbled goat cheese

2 tbsp. freshly chopped rosemary

Preparation

Step 1Line a large baking sheet with parchment. In a large bowl, whisk together flour, sugar, baking powder, and salt. Add butter and use your hands to cut into flour until the size of peas. Add mix-ins and toss to coat in flour. Step 2In a small bowl or glass measuring cup, whisk together buttermilk and eggs. Add to dry ingredients and use a rubber spatula to mix until a dough starts to form. Add more buttermilk, 1 tablespoon at a time, as needed to help dough form. Step 3Dump dough onto counter and gently pat into an 8” circle. Use a knife or bench scraper to cut into 8 triangles. Place on prepared baking sheet and freeze for 30 minutes. Step 4Preheat oven to 400°. Bake scones until golden, 20 minutes.
