Ingredients

3 tbsp. vegan mayonnaise

1 big squeeze lime juice

1/4 tsp. chipotle chili powder

2 tbsp. extra-virgin olive oil, divided

1 red onion, thinly sliced

1 plant-based patty, preferably Impossible Burger

1 vegan Hawaiian bun, toasted

1 slice vegan cheese

2 slices vegan bacon, cooked

Lettuce

Tomato

Preparation

Step 1Make sauce: In a small bowl, whisk ingredients until combined. Refrigerate until ready to use.Step 2Make burger: In a large skillet over medium heat, heat 1 tablespoon oil. Add onion and cook, stirring often, until starting to soften. Reduce heat to medium-low and continue to cook, stirring often, until deep golden and jam-like, 45 to 60 minutes. Transfer to a plate and wipe skillet clean.Step 3Add remaining 1 tablespoon oil to skillet and heat over medium-high. Cook patty 2 to 3 minutes per side, or until it reaches desired doneness.Step 4Slather bun with sauce. Add patty, cheese, and a big spoonful of caramelized onions. Let cheese melt. Add bacon, lettuce, and tomato. Top with bun.

P.S. This recipe serves 1, but you can easily increase it to serve 2, 4, or more.
