Ingredients
1 (7.25-oz.) box macaroni and cheese
1/4 c. milk
2 tbsp. butter
1/2 tsp. taco seasoning
1/2 c. shredded cheddar, Monterey jack, or Mexican cheese blend
1/2 c. pico de gallo, plus more for serving
2 green onions, thinly sliced
kosher salt
Preparation
Step 1 Fill a medium pot with water and add a big pinch of salt. Bring to a boil over high heat. Cook pasta according to package instructions, then drain into a colander.Step 2In the same pot over medium-low heat, add milk and butter and whisk until butter is melted. Whisk in powdered cheese packet and taco seasoning. Remove from heat, add pasta and shredded cheese, and stir with a wooden spoon until cheese has melted. Stir in pico de gallo.Step 3Top mac and cheese with more pico de gallo and green onions before serving.
