Ingredients

1 lb. carrots, halved lengthwise and cut into 1 1/2" pieces

2 tbsp. butter

1 tbsp. honey

1 tsp. lemon juice

1/4 tsp. red pepper flakes

Pinch kosher salt

1 tsp. lemon zest

Flaky sea salt, for garnish (optional)

Preparation

Step 1Fill a pot with 2" of water and put a steamer insert inside. Cover and bring the water to a simmer. Add the carrots, re-cover, and steam until tender to your liking, 15 minutes for crisp-tender or up to 25 minutes for very soft carrots.Step 2Just before the carrots are finished, in a small bowl, combine butter, honey, lemon juice, pepper flakes, and a pinch of salt. Microwave until butter is melted, about 15 seconds. Stir well to combine.Step 3Transfer carrots to a serving bowl or platter and pour butter mixture over top. Toss to coat, and sprinkle carrots with lemon zest and flaky salt, if desired.
