Ingredients

1 (8-oz.) wheel of brie

1/2 c. chopped artichoke hearts

1/3 c. frozen spinach, thawed and drained

2 cloves garlic, minced

Kosher salt 

Freshly ground black pepper

Crushed red pepper flakes 

Crackers, for serving

Preparation

Step 1Preheat oven to 375°. Place brie in a small oven safe skillet or small baking dish. Using a sharp knife, cut a circle ¼” in from border and remove top rind. Scrape any brie off rind, then discard rind. Use a spoon to scrape most of the brie out of the wheel, being sure to leave a ¼” border on the sides and not going through the bottom rind. Step 2Place brie into a medium bowl. To same bowl, add artichokes, spinach, and garlic. Season with salt, pepper, and red pepper flakes. Step 3Spoon mixture back into brie wheel, packing it in tightly and piling on top. Bake until melty, 25 to 30 minutes. Serve warm with crackers.
