Ingredients

1 tbsp. canola oil

1 large onion, diced

2 cloves garlic, minced

1 jalapeño, minced

1 tbsp. tomato paste

1 tbsp. chili powder

2 tsp. ground cumin

Pinch of cayenne pepper

1 lb. ground turkey

1 15-oz. can black beans, rinsed

1 28-oz. can diced tomatoes

4 c. low-sodium chicken broth

Green onions, for garnish

1/2 c. shredded Cheddar

Preparation

Step 1In a large pot over medium-high heat, heat oil. Cook onion until soft, 5 minutes. Add garlic and jalapeño and cook until fragrant, 2 minutes more. Add tomato paste, chili powder, cumin, and cayenne and cook, stirring, 1 minute more.Step 2Add turkey and cook, stirring, until cooked through and golden, 5 to 7 minutes. Add black beans and canned tomatoes, stirring to combine, then add broth.Step 3Increase heat to a simmer and let cook, 25 minutes.Step 4Serve in bowls topped with green onions and cheddar.
