6 tbsp. mayonnaise
1/4 c. sriracha
1 tsp. granulated sugar
Pinch kosher salt

Step 1In a medium bowl, whisk together all ingredients until smooth.
My preferred spicy condiment to use here is sriracha, and my favorite sriracha brand right now is Sriraja Panich from Thailand. You can also use any bottled hot sauce instead, but just know that the different ingredients and more vinegar-forward formulas of something like Tabasco or Cholula will alter the final taste of your spicy mayo to be a little more tart and spiky than intended. Once you’ve got a batch made, store it in a clean jar and it’ll keep in the fridge for a week or more, as long as you’re not double-dipping and introducing germs into the jar. Eat with fries, burgers, fried rice, or even fresh fruit! My favorite fruity pairing for this sauce is a ripe mango. Don’t knock it till you try it!
