3 c. all-purpose flour, plus more for surface

1 tsp. baking powder

1/2 tsp. kosher salt

1 c. (2 sticks) butter, softened

1 c. granulated sugar

1 tsp. pure vanilla extract

1 tbsp. milk

3 c. powdered sugar

1/4 c. light corn syrup

1/4 c. milk, plus more for thinning

1/4 tsp. almond (or pure vanilla) extract

Blue food coloring

Pearl sprinkles, for decorating

Preparation

Step 1Make cookie dough: In a large bowl, whisk together flour, baking powder, and salt.Step 2In another large bowl using a hand mixer or the bowl of a stand mixer using the paddle attachment, beat butter and sugar until fluffy and pale in color. Add egg, milk, and vanilla and beat until combined. Add flour mixture gradually until totally combined. Step 3Shape into a disk and wrap in plastic. Refrigerate 1 hour.Step 4When ready to bake, preheat oven to 350º and line two baking sheets with parchment paper. Lightly flour a clean work surface and roll out dough to 1/8" thick. Cut out snowflakes and transfer to baking sheets. Freeze 10 minutes.Step 5Bake cookies until edges are lightly golden, 8 to 10 minutes. Let cool completely before icing.Step 6 Meanwhile, make icing: In a medium bowl, stir powdered sugar, corn syrup, milk, and almond extract. Add more milk a teaspoon at a time to thin, if necessary.Step 7 Transfer half the icing to a small bowl and tint with blue food coloring. Transfer both icings to two piping bags and ice cookies. Decorate with pearl sprinkles.
