Ingredients

3 lb. beef brisket

1 small white onion, sliced

2 garlic cloves, smashed and peeled

2 c. low sodium chicken stock

2 sprigs fresh thyme

Kosher salt

Freshly ground black pepper

Preparation

Step 1Place all ingredients in slow cooker and season with salt and pepper. Cover and cook 6 to 8 hours on low, or until brisket is completely tender. Step 2Remove from slow cooker to slice. Serve with jus.

Do I need to sear my brisket before slow-cooking it? Nope! The beauty of this recipe is how completely hands-off it is. Simply place your beef brisket in the slow cooker along with all your seasonings and ingredients, and let it do all the work for you.  How do I make sure I don’t overcook my brisket? You definitely can overcook brisket in the slow cooker, so we highly recommend two tips to ensure your brisket is perfectly cooked: cook low and slow, and keep an eye on it. Make sure your slow cooker is set to low instead of high to avoid overcooking. Although it does take awhile, that’s where the flavor develops (plus, it’s completely hands-free!). After around 6 hours or so, make sure to check on your brisket and adjust your cooking time. This would also be a great time to see if you need to adjust your seasoning!  What should I serve with my brisket? The best part of this dish? You can throw your veggie sides into the slow-cooker along with your brisket! Not only will your sides be ready at the same time as your main dish, but they’ll also get deliciously flavorful cooking alongside your main protein. We added onion, but feel free to throw in carrots, mushrooms, or potatoes to add a bit of heartiness.
