Pancake mix, plus ingredients called for on box
1 tsp. pure vanilla extract
Butter for pan
6 strawberries, stem side cut
Whipped topping
Powdered sugar, for serving
Maple syrup, for serving
Preparation
Step 1In a large bowl, prepare pancake mix according to package directions. Stir in vanilla. For easy pouring, transfer batter to a clean squeeze bottle.Step 2In a large nonstick skillet over medium heat, melt butter. Squeeze small rounds of batter into pan and cook until bubbles form in batter and begin to pop, about 1 minute. Flip and cook until golden on the other side, about 1 minute more. Transfer to a plate and cover with foil to keep warm.Step 3On a serving platter, stack three mini pancakes. Spread whipped topping on top, then place a strawberry on top. Add a tiny dollop of whipped topping to the tip of the strawberry.Step 4Sprinkle with powdered sugar and serve with maple syrup.
