Ingredients

2 large white onions, peeled 

3/4 c. buttermilk

1/2 c. pilsner beer

2 tbsp. malt vinegar, plus more for serving 

1 large egg

1 1/4 c. unbleached all-purpose flour 

1/2 tsp. sweet paprika

Pinch cayenne pepper

Kosher salt

Vegetable oil, for frying

Flaky sea salt 

Preparation

Step 1Cut onions crosswise into ½-inch thick rings, separate rings. Step 2In a medium bowl, whisk buttermilk, beer, vinegar, and egg. Stir in flour, paprika, and cayenne and season with salt. Step 3Heat ½-inch oil in a large cast iron skillet until hot. Dip one onion ring into batter and then carefully place in hot oil. Cook, turning halfway through, until golden, about 5 minutes. Repeating with remaining rings, cooking multiple at a time, but not overfilling skillet. Remove as done with a kitchen spider or slotted spoon to a wire rack or paper towel lined plate and season with flaky salt salt immediately. Step 4Sprinkle onion rings with more vinegar and serve with malt vinegar.
