Ingredients
2 tbsp. mayonnaise
2 tbsp. low-sugar ketchup
1 tbsp. sweet pickle relish
3/4 tsp. prepared horseradish
1/2 tsp. fresh lemon juice
1/4 tsp. Worcestershire sauce
Kosher salt
Freshly ground black pepper
2 c. pickle chips, drained
4 oz. thinly sliced corned beef
3 oz. thinly sliced Swiss
1/4 c. sauerkraut
Preparation
Step 1Make the dressing: In a small bowl, whisk together mayonnaise, ketchup, pickle relish, horseradish, lemon juice, and Worcestershire. Season with salt and pepper.Step 2Arrange half the pickle chips on a platter. Top with sliced corned beef, Swiss, sauerkraut, and drizzle with dressing. Close the bites with remaining half of pickles and a toothpick.
We gotta admit, though we adore pickles, it’s really all about the Russian dressing here. It takes these from average to over the top. Store-bought will work in a pinch, especially if you’re throwing these together last-minute, but we’re big fans of our homemade version. Make a bunch, and enjoy it on everything from pizzas to salads. We’ve even heard of people combining it with apricot jam for a sweet and sour Russian chicken, which sounds incredible (and right up our creative alley). Speaking of loving pickles, these little bites work on whatever type you prefer. Bread and butter, dill, and even spicy will all work here, so use what you got. Want to switch things up? Try swapping Swiss for cheddar or provolone, or replacing the sauerkraut with coleslaw (or cabbage).
