Ingredients

3/4 c. unsalted butter, softened

1 c. sugar

1/2 c. brown sugar

2 eggs

2 tsp. vanilla

2 c. flour

1/4 c. Unsweetened cocoa powder

1 tsp. baking soda

1 tbsp. red food coloring

1 tsp. kosher salt

16 oz. cream cheese, softened

1/2 c. unsalted butter, softened to room temperature

3 c. powdered sugar

1 tsp. vanilla extract

Preparation

Step 1Preheat oven to 350°. Grease a 9”-x-13” baking pan with cooking spray.Step 2In a large bowl, cream butter and sugars with a hand mixer until light and fluffy. Beat in egg and vanilla. Add flour, cocoa powder, baking soda, food coloring, and salt. Mix until just combined. Spread dough into prepared baking pan. Bake for 15-20 minutes. Let cool completely. Step 3Make frosting. In a large bowl, beat cream cheese and butter until light and fluffy. Add confectioners’ sugar and vanilla and mix to combine. Spread over cooled red velvet cookie. Slice into squares.
