Ingredients
Canola oil for frying
2 c. sliced dill or sweet pickles
1 1/2 c. crushed RITZ Crackers
1/4 c. all-purpose flour
2 tsp. Cajun seasoning
1/2 tsp. salt-free Italian seasoning
1/2 tsp. cayenne pepper
1 egg beaten with 1 Tbsp. water
1/4 tsp. kosher salt
Preparation
Step 1Heat 1 inch of canola oil in a heavy-bottomed or cast iron pot to 375 degrees F. Place pickles on paper towels to dry slightly. Step 2In a bowl, mix together crushed RITZ Crackers, flour, and spices, and set aside. In a separate bowl, set aside egg beaten with water. Step 3Dip pickles in egg mixture, and then dredge them in the cracker mixture and set aside. Step 4Fry them in batches and drain on paper towels. Sprinkle finished pickle fries with kosher salt.
