1 (14-oz.) refrigerated pie dough
1 c. canned pumpkin puree
1/2 c. sweetened condensed milk
1 tsp. pure vanilla extract
1 tsp. pumpkin pie spice, plus more for garnish
1/4 tsp. kosher salt
Whipped topping, for serving
Preparation
Step 1Preheat oven to 375° and grease a large baking sheet with cooking spray. On a clean surface, unroll pie dough. Using a 4” round cookie cutter, cut circles out of crust and place on prepared pan. Fold about ¼” of the edge of each circle into the center and then crimp edge. Repeat with second sheet of pie dough. Step 2In a medium bowl, combine pumpkin puree, sweetened condensed milk, vanilla, pumpkin spice, and salt. Spoon filling into each pie crust. Step 3Bake until crust is golden and filling is set, about 20 minutes. Step 4Top with whipped topping and a sprinkle of pumpkin spice to serve.
If you’re really in a crunch for time, you can absolutely use store-bought refrigerated pie dough for this recipe. But, our homemade pie crust is so easy and delicious, we can’t help but recommend it for the flakiest cookies possible. Same story with the topping — you can totally use store-bought whipped topping to complete your baby pies if that’s your preference, but, our homemade whipped cream would also be a perfectly fluffy pairing that’s ready in 15 minutes! We love to complete our cookies by adding a sprinkle of pumpkin pie spice on top of the whipped cream, but feel free to experiment! Try adding a little design out of pie crust on top, candied pecans or crushed gingersnaps if you’re feelin’ fancy! Curious about all the varieties of canned pumpkin? It can be kind of confusing. If all you have is canned pure pumpkin, no stress — it’s the same thing as canned pumpkin puree! However, steer clear of using pumpkin pie filling in this recipe. Pumpkin pie filling includes added flavors and ingredients while pumpkin puree is plain and customizable.
