Ingredients

2/3 c. powdered sugar

1/3 c. granulated sugar

4 egg whites

1/8 tsp. cream of tartar

1/8 tsp. salt

1 tsp. raspberry extract

5 drops pink food coloring

Preparation

Step 1Preheat the oven to 250 degrees F. Step 2Mix the sugars and set aside. In the bowl of an electric mixer, add egg whites. Beat until foamy, then add cream of tartar and salt.Step 3Start adding sugar to the mixture slowly, 1 tablespoon at a time. Add raspberry extract and beat to incorporate. After this, the egg whites should appear stiff and glossy.Step 4Transfer mixture to a piping bag fitted with a large star tip. Line 2 baking sheets with parchment paper. Pipe meringues into about 24 ribbon shapes.Step 5Bake for 1 hour exactly, then turn off the oven and let the meringues sit for 3 hours, and up to 8. Don’t open the oven door until then!
