6 tbsp. all-purpose flour
1/4 c. granulated sugar
2 (20-oz.) cans pineapple chunks, plus 1/2 c. juice
1 c. shredded cheddar
32 Ritz crackers (1 sleeve), crushed (about 1 1/3 c.)
4 tbsp. (1/2 stick) butter, melted
Preparation
Step 1Preheat oven to 350°. Coat an 8"-by-8" baking pan with cooking spray.Step 2In a large bowl, whisk flour, sugar, and 1/2 c. pineapple juice until combined. Add drained pineapple chunks and toss to coat. Transfer pineapple mixture to prepared pan.Step 3Sprinkle cheese evenly over pineapple mixture, then top with crackers. Drizzle butter over.Step 4Bake until filling is bubbling and crumbs are golden brown, 30 to 35 minutes. Serve immediately.
Pineapple casserole is unbelievably easy to throw together in just a couple of minutes, with ingredients you might already have in the pantry. While it may be tempting to mix up the ingredients in pineapple casserole, you’re going to want to stick to the traditional ratios of canned pineapple to cheddar to crackers. Save the fancy shenanigans for pineapple desserts like our pineapple coconut cake or pineapple upside-down cake instead. (Or, hey, serve pineapple casserole with a scoop of ice cream and call it a savory-sweet crisp.) Though you may be tempted to swap in fresh pineapple, stick with the canned version, since you’ll use the juice, too.
