Ingredients

1 lb. cheese pierogi

1 large head broccoli, cut into florets

4 strips bacon, chopped

1 1/2 c. shredded Cheddar

Freshly chopped chives, for garnish

Sour cream, for serving

Preparation

Step 1In a large pot of boiling water, cook pierogi until they are puffy and tender, 3 to 5 minutes. (The pierogi should rise to the top when they are ready.) During the last 2 minutes of cooking, add broccoli. Drain broccoli and pierogi together.Step 2In a large skillet over medium heat, cook bacon until crispy, about 6 minutes. Remove bacon and drain on paper towels. Step 3Add pierogi and cook until golden, about 2 minutes per side, then stir in broccoli. Step 4Stir in bacon, then cover pierogi and broccoli with cheese. Cover the skillet with a tight-fitting lid and cook until cheese is melted and bubbling, about 2 minutes. Step 5Garnish with fresh chives and serve warm with sour cream.
