Ingredients
6 c. (680 g.) powdered sugar, plus more for dusting
1 (14-oz.) can condensed milk
1 tbsp. peppermint extract
2 tsp. finely chopped fresh mint (optional)
1 lb. bittersweet chocolate chips
Preparation
Step 1Line a baking sheet with parchment and dust with powdered sugar. In the large bowl of a stand mixer fitted with the whisk attachment, beat powdered sugar, milk, peppermint extract, and mint, if using, on medium-high speed until well combined and a dough forms.Step 2Scoop 1-ounce portions (about 2 tablespoons) dough and arrange on prepared pan. Flatten to a small disk (they will relax as they sit, so don’t flatten too much). Freeze until set, about 1 hour. Step 3Meanwhile, in a double-boiler or in the microwave, melt chocolate until smooth.Step 4Line another baking sheet with parchment. Dip rounds into chocolate and arrange on prepared sheet. Freeze until set, about 10 minutes more, or until ready to serve.
- The dough may appear dry when mixing, so keep beating until it comes together. It’s kind of difficult to overmix this type of dough.
- Form the patties and chill before dipping in the warm chocolate. The patties tend to soften once exposed to heat, so be sure not to skip this step.
