Preparation
Step 1Preheat oven to 300°. Cut two large squares of parchment paper and place on a large baking sheet. Grease with cooking spray. Step 2Into the center of 1 piece of parchment paper, place one peppermint candy. Surround with 2 concentric circles. Bake until the candies look glossy and slightly melted, about 7 minutes. Step 3Meanwhile grease 2 very small bowls (about 3” in diameter) with cooking spray and place bottom side up on working surface. Very carefully, invert the melted peppermints onto the inverted bowl, pressing against the parchment to make sure the peppermint is touching the bowl. Let set for a few minutes, then remove bowl. Step 4Serve with ice cream.
