Ingredients

1 large ciabatta loaf, cut in half lengthwise

extra-virgin olive oil

8 large tomatoes, chopped

3 cloves garlic, minced

1/4 c. finely sliced basil, plus more for garnish

2 tbsp. balsamic vinegar

kosher salt

Freshly ground black pepper

1/2 c. finely grated Parmesan

Balsamic glaze, for serving (optional)

Preparation

Step 1Preheat oven to 400°.Step 2Place ciabatta halves cut side-up on a large baking sheet. Brush with olive oil and bake until bread is toasted, about 15 minutes. Step 3Meanwhile, combine tomatoes, a drizzle of olive oil, garlic, basil, and balsamic vinegar in a large bowl. Season with salt and pepper to taste. Spoon the mixture onto the toasted bread. Drizzle with balsamic glaze if using, and sprinkle with Parmesan and more basil. Step 4Cut into large slices before serving.
