Ingredients
Cooking spray, for pan
3/4 c. butter, softened
1 c. loosely packed brown sugar
1/2 c. granulated sugar
1/2 c. smooth peanut butter
1/2 c. sour cream
1 tbsp. pure vanilla extract
3 large eggs
2 1/2 c. all-purpose flour
2 1/2 tsp. baking powder
1/2 tsp. kosher salt
3/4 c. whole milk
1 1/4 c. smooth peanut butter
1 (8-oz.) block cream cheese, softened
4 c. powdered sugar
1 tsp. pure vanilla extract
2-4 tbsp. heavy cream
Pinch kosher salt
Nutter Butter Bites, for garnish
Preparation
Step 1Make cake: Preheat oven to 350°. Grease two 8” cake pans with cooking spray and line the bottoms with parchment paper. In a large bowl using a hand mixer, beat together butter, sugars, and peanut butter until light and fluffy. Add sour cream, eggs, and vanilla, and mix until smooth. Step 2In a separate bowl, whisk together flour, baking powder, and salt. Add half of the dry ingredients to the wet ingredients, beating until just combined. Pour in the milk and mix until fully incorporated. Add remaining dry ingredients and stir until just combined. Step 3 Divide batter between prepared cake pans. Bake until a toothpick inserted into each comes out clean, about 35 minutes. Let cool in pan then invert onto a wire rack to cool completely. Step 4
Make frosting: In a large bowl using a hand mixer, beat peanut butter and cream cheese until light and fluffy. Add powdered sugar, vanilla, and salt and mix until mixture is well combined. Gradually add heavy cream until frosting is smooth and creamy. Step 5Place one cake on a serving platter and cover top with frosting. Place second cake on top and cover the whole cake with frosting. Transfer remaining frosting to a piping bag fit with a large star tip and pipe dollops on top of cake around perimeter. Place Nutter Butter Bites on top of dollops and around the bottom of cake.
