Ingredients

1 c. cold butter, cubed

1 c. brown sugar

1 c. granulated sugar

2 eggs

2 tsp. pure vanilla extract

2 3/4 c. all-purpose flour

3 tbsp. cornstarch

1 tsp. baking powder

1/2 tsp. salt

1 c. mini semisweet chocolate chips

1 c. semisweet chocolate chunks, divided

Preparation

  1. Cream Butter: In the bowl of a stand mixer fit with a paddle attachment, beat butter and sugars for 3 minutes, until fluffy.
  2. Add Wet Ingredients: Add eggs and vanilla and mix until blended.
  3. Mix Dry Ingredients: In a medium bowl, whisk flour, cornstarch, baking powder, and salt to combine. Slowly add to the mixing bowl, beating on low speed, until flour is incorporated.
  4. Add Chocolate: Add mini chocolate chips and 1/2 c. of chocolate chunks until chocolate is evenly distributed. Do not overmix.
  5. Divide Dough: Place 1/2 c. of dough into reserved baking cups, gently pressing dough into the bottom of each one.
  6. Top With Chocolate: Evenly divide the remaining 1/2 c. of chocolate chunks among cookies and press into the top of the cookies.
  7. Bake Cookies: Bake until golden brown, 20 to 22 minutes. Cool for 5 minutes, then transfer to wire cooling racks.
