Ingredients

6 large eggs

2 bananas, mashed

2 tbsp. unsweetened almond butter

3 tbsp. whole-wheat, rice, or quinoa flour

Kosher salt 

1/2 tsp. ground cinnamon 

Cooking spray

1/2 tbsp. coconut butter

1/2 tbsp. almond butter

1/4 banana, sliced

1/2 tbsp. chopped walnuts

1 tbsp. maple syrup or coconut nectar

Preparation

Step 1Heat waffle iron. In a large bowl, mix eggs, mashed bananas, almond butter, whole wheat flour, and cinnamon, using a fork, until smooth and season with a pinch of salt.Step 2Grease waffle iron with cooking spray. Add 1/3 cup batter and cook until golden. Repeat with remaining batter.Step 3Store waffles in fridge in a resealable container and serve with desired toppings.

Plus, it turns out waffles are excellent for meal prepping; simply heat them up before eating and top with our suggested toppings.
