1/2 c. (1 stick) butter, softened
1 c. granulated sugar
1 tbsp. lemon zest, plus more for garnish
3 large eggs
1 tsp. pure vanilla extract
2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. Kosher salt
3/4 c. buttermilk
1/2 c. powdered sugar
1 tbsp. lemon juice
Preparation
- In a separate large bowl, whisk together flour, baking powder, baking soda, and salt. Mix half the dry ingredients into wet, then buttermilk, finishing with remaining dry ingredients. Mix until just combined.
- Pour batter into pan and smooth top. Bake until a toothpick inserted into the center comes out clean, about 55 minutes. Let cool 10 minutes, then invert onto a wire rack to cool completely. 4. For the glaze: In a small bowl, whisk together powdered sugar and lemon juice. Drizzle over top of cooled cake and garnish with more zest.
