Ingredients

5 c. leftover stuffing 

1 1/2 c. shredded white cheddar

2 large eggs  

1/4 c. low-sodium chicken or turkey broth 

Cooking spray

1 1/2 c. leftover mashed potatoes, warmed 

3 c. leftover sliced turkey breast, warmed if desired 

1/2 c. leftover gravy 

1/2 can jellied cranberry sauce, thinly sliced 

1 oz. baby spinach

Preparation

Step 1Heat waffle iron. In a large bowl, mix together stuffing, cheese, egg, and broth. Step 2Spray waffle iron with cooking spray. Working in batches, add a heaping cup of the stuffing mixture to the hot waffle iron and cook until golden and crispy, about 4 minutes. Remove to plate and repeat with remaining stuffing. Step 3Lay one stuffing waffle on a plate and top with mashed potatoes, turkey, cranberry, and spinach. Drizzle gravy generously over top. Sandwich with another waffle. Repeat with remaining waffles and ingredients. Slice each into halves or quarters and serve warm.
