Ingredients
1 1/4 c. semisweet chocolate chips
1/4 c. sweetened condensed milk
2 tbsp. brewed Cafe Bustelo® Espresso, room temperature
Cooking spray
12 tbsp. (1 1/2 sticks) butter, softened
1 1/4 c. granulated sugar
2 large eggs
2 tsp. pure vanilla extract
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. kosher salt
Preparation
Step 1Preheat oven to 350°. Melt chocolate chips in microwave, about 1 minute. Whisk in condensed milk and espresso until smooth. Step 2Make blondies: Grease a 9"-x-9” pan with cooking spray. Line with parchment, leaving a 2” overhang on two sides. In a large bowl using a hand mixer, beat butter and sugar until fluffy. Add eggs and vanilla and beat until combined.Step 3In a medium bowl, whisk together flour, baking soda, and salt. Pour dry ingredients into wet ingredients and beat on low until just incorporated. Spread half the batter into bottom of prepared pan. Pour fudge layer on top and evenly spread. Carefully dollop spoonfuls of remaining blondie batter on top of fudge layer, then gently smooth top. Step 4Bake until golden, about 40 to 45 minutes. Let cool, then slice into bites and serve.
