Ingredients
9 large eggs, divided
1 (8-oz.) block cream cheese, softened to room temperature, cut into cubes
1 tsp. maple extract
1 tsp. pure vanilla extract
1 1/2 c. almond flour
2 tsp. baking powder
1 tsp. kosher salt
Butter, for pan
4 pieces bacon, cooked
1 tbsp. heavy cream
Freshly ground black pepper
4 slices American cheese
Preparation
Step 1In a medium bowl, whisk together 4 eggs, cream cheese, maple extract, and vanilla. Add almond flour, baking powder, and salt. Step 2In a medium nonstick skillet, melt butter. Add about ¼ cup of batter to pan and cook, 3 minutes, then flip and cook another 3 minutes or until golden and cooked through. Repeat with remaining batter. Step 3In a small nonstick skillet, melt butter. In a small bowl whisk together remaining 5 eggs and heavy cream. Season with salt and pepper. Pour about ¼ of eggs into skillet. Let cook 1 minute, then fold edges into the center to create a small circle. Repeat with remaining eggs. Step 4Place eggs on top of a griddle cake, then cheese and a slice of bacon and top with another griddle cake.
