Ingredients

1/2 c. olive oil

1/4 c. red wine vinegar

1/4 c. freshly squeezed orange juice

2 tbsp. minced shallot

Kosher salt

Freshly ground black pepper

2 large bunches of kale, ribs removed and roughly chopped

1 apple, thinly sliced

1/2 c. dried cherries

1/2 c. toasted sliced almonds

1/4 c. crumbled feta

Preparation

Step 1In a medium bowl whisk together olive oil, red wine vinegar, orange juice, and shallot. Season with salt and pepper. Step 2In a large bowl toss together kale, apples, cherries, and almonds. Step 3Toss with dressing and top with feta to serve.

So kale it is… the superfood we all hear about over and over again. Luckily this salad has the perfect mashup of sweet, tart, and creamy. Kale is a versatile green that will hold up in basically any form. If you love chips but want something “healthier”our kale chips rock. Or a hearty soup like our best vegetarian soup with “kale.” This vibrant green will even show up on paninis in pesto form with turkey and mozzarella. It’s a green that stands strong in salads without sogging out- no one likes a soggy salad. There is something satisfying about a sweet apple, toasted nuts, and softy crumbly cheese with kale. That’s why we think you’re going to really enjoy this one! Can this salad be made ahead? Kale-especially curly kale- is a leafy green that holds up quite well once a dressing hits it. You may even say it’s better the day after preparing. But, of course store the salad in the fridge with an airtight container. It may even be worth cutting the apples right before you eat so they don’t turn too brown. What does it mean to massage kale? So massaging kale is a thing! Because the green can be a little rough on the palate massaging a little bit of oil into the leaves will help break it down ever so slightly. The leaves will soften in result. If you want another acidic citrus based dressing make . Creamy dressings like Green Goddess, Caesar, or Ranch will of course be a hit.
