Ingredients

1 lime, sliced

1/2 orange, sliced

1 1/2 lb. salmon filet

Kosher salt

Freshly ground black pepper

1/4 c. freshly squeezed orange juice

1/4 c. freshly squeezed lime juice

Zest of 1 lime

2 tbsp. honey

1 jalapeño, seeded, and chopped 

1 clove garlic, minced 

Preparation

Step 1Preheat oven to 400°. Line a large rimmed baking sheet with foil. Lay lime and orange slices on foil in an even layer and place salmon on top. Season salmon with salt and pepper. Step 2In a small bowl or glass measuring cup, combine juices, zest, honey, jalapeño, and garlic. Pour over salmon. Step 3Bake salmon until center reaches 140° and flakes easily with a fork, about 30 minutes depending on thickness of salmon. Remove from oven every 10 minutes and spoon sauce over salmon while baking.
