Ingredients

1 Medium onion, sliced

2 tbsp. butter

10.5-oz. can beef consommé

1/2 c. plus 1 1/2 tbsp. cold water, divided

1 1/2 tbsp. cornstarch

1/4 c. butter

1/8 tsp. French thyme

8 tsp. garlic salt

1/2 c. french onion soup

4 oz. Gruyère cheese, shredded

4 slices French bread, cut 1/2" thick

Compound butter, for spreading

Preparation

Step 1Make the Soup: Cook onions in butter until translucent. Add consommé and 1/2 cup water; bring to a simmer. Mix 1 1/2 tablespoon cold water and cornstarch together and add to consommé. Stir until creamy.Step 2Make the Compound Butter: Mix together butter, thyme and garlic salt until well combined.Step 3Assemble the Grilled Cheese: Mix French Onion soup with cheese, just until cheese is moistened. Butter one side of each piece of bread. Spread cheese mixture on unbuttered side of two pieces of bread. Preheat skillet over medium to low heat, then add assembled grilled cheeses and cook until golden brown. Step 4Serve with French Onion soup.
