Ingredients

8 oz. cream cheese, softened

1/2 c. sour cream

1 c. crumbled feta

Juice of 1/2 lemon

2 c. shredded mozzarella, divided

1 c. frozen spinach, defrosted and squeezed dry

2/3 c. Roasted Red Peppers, drained and chopped

kosher salt

Freshly ground black pepper

Freshly chopped parsley, for garnish

Preparation

Step 1Preheat oven to 350°. In a large bowl, combine cream cheese, sour cream, feta and lemon juice. Stir until the mixture is evenly combined and as smooth as possible. Stir in 1 1/2 cup mozzarella, spinach and most of the roasted red peppers (reserve some for topping) then season with salt and pepper.Step 2Transfer mixture to a small baking dish. Top with remaining mozzarella and roasted red peppers. Step 3Bake until bubbly, about 15 minutes. (If desired, broil 3 minutes.)Step 4Garnish with parsley and serve.
