1/4 c. butter
2 tbsp. honey
1/2 tsp. dried rosemary
1/2 tsp. garlic powder

15 carrots (2 lbs.), peeled and halved lengthwise
Fresh thyme, for garnish (optional)
Preparation
Step 1Preheat oven to 400º. In a saucepan over low heat, melt butter. Stir in honey, rosemary, and garlic powder and season with salt and pepper. Step 2Place carrots on a large baking sheet. Pour over glaze and toss until coated.Step 3Roast until caramelized and glazed, 35 to 40 minutes.Step 4Garnish with thyme, if desired, before serving.

How do I store and reheat leftovers?If you have leftovers, you can store them in an airtight container in the refrigerator for up to 3 days. To reheat, we recommend microwaving in a covered container in 30-second intervals. You may want to add a teaspoon of water to the container before heating, just to add some additional moisture that will prevent the glaze from getting too sticky while it’s being reheated.
