Ingredients

1/4 c. low-sodium soy sauce

3 tbsp. honey

2 cloves garlic, minced

Juice of 1 lime

2 tbsp. sesame oil, divided

1 tsp. Sriracha

1 tbsp. cornstarch

1 lb. boneless skinless chicken breasts

Kosher salt

Freshly ground black pepper

Sesame seeds, for garnish

Sliced green onions, for garnish

Preparation

Step 1Preheat oven to 350°. In a medium bowl, whisk together soy sauce, honey, garlic, lime juice, 1 tablespoon sesame oil, Sriracha, and cornstarch.Step 2Season chicken with salt and pepper. In a large oven-safe skillet over medium-high heat, heat remaining tablespoon sesame oil. Add chicken and sear until golden, 4 minutes per side. Pour over glaze and transfer to oven.Step 3Bake until chicken is no longer pink, 25 minutes. Heat broiler.Step 4Spoon glaze over chicken and broil until caramelized, 2 minutes. Garnish with green onions and sesame seeds.

Is it essential to have an oven-safe skillet for this? Yes. This method is one that we love using at Delish: First you sear the chicken in the oven-safe skillet to take on some crust, then you transfer it to a preheated oven to finish cooking. It saves you cleanup—one-pan for the win!—and cooks the chicken perfectly. Do you marinate the chicken? Nope! You sear it, then pour over a simple glaze of soy sauce, sesame oil, lime juice, Sriracha, and honey and bake the chicken until it’s cooked through, about 25 minutes. The flavor will soak into the chicken as it bakes, so no marinade necessary. Can I use chicken thighs in this recipe? You sure can! In fact, watch the below video for instructions using thighs. You don’t need to sear thighs for quite as long before pouring in the marinade. Sear the thighs for just 2 minutes per side, then pour over glaze and bake until no longer pink, 20 to 25 minutes. How do I know when the chicken is cooked through? Chicken is cooked through when its juices run clear. You can also use a meat thermometer to make sure the internal temperature reaches 165º. I’m not the biggest Sriracha fan—what can I substitute? We only use 1 teaspoon of the rooster sauce in this recipe for some heat, but you can sub in your favorite hot sauce, chili garlic sauce, or a pinch of cayenne or crushed red pepper flakes.
