Ingredients

Cooking spray

2 c. (240 g.) all-purpose flour

1 tsp. baking powder

1 tsp. kosher salt

3/4 c. (1 1/2  sticks) unsalted butter, melted

3/4 c. (160 g.) packed light brown sugar

1/2 c. (170 g.) honey

1/2 c. (135 g.) peanut butter

1 large egg

1 large egg yolk

1 tsp. pure vanilla extract

1/2 c. (60 g.) honey-roasted peanuts, roughly chopped

Preparation

Step 1Preheat oven to 350°. Line a 9"-by-9" baking pan with parchment, leaving a 2" overhang on 2 opposite sides. Grease with cooking spray.Step 2In a medium bowl, whisk flour, baking powder, and salt. Step 3In a large bowl, whisk butter, brown sugar, honey, and peanut butter until smooth. Add egg and egg yolk and whisk until incorporated, then whisk in vanilla. Add dry ingredients and whisk until just combined. Step 4Pour batter into prepared pan and smooth in an even layer. Top with peanuts. Step 5Bake blondies until edges start to pull away from sides of pan and a tester inserted into the center comes out clean, 25 to 30 minutes. Let cool completely. Step 6Using parchment overhang, lift blondies out of pan and slice into squares.
