Ingredients

1 10-oz. box couscous

1/4 c. whole-grain Dijon mustard

1/4 c. apricot jam

5 tbsp. extra-virgin olive oil, divided

2 tbsp. Freshly Chopped Basil

2 tbsp. freshly chopped mint

kosher salt

Freshly ground black pepper

4 sausages (chicken, pork, or lamb)

Juice of 1 lemon

6 c. mixed greens

Preparation

Step 1Bring 2 cups of water to boil. Add couscous, remove from heat and cover. Let sit for 5 minutes and fluff with fork. Spoon couscous into bowl to let cool slightly.Step 2In small bowl, whisk together Dijon mustard and apricot jam, then set aside.Step 3Add 1 tablespoon olive oil, basil, and mint to couscous and stir to combine. Season salt and pepper. Step 4Heat lightly oiled grill pan over high heat, and grill sausages for 8 to 10 minutes, rotating sides every 2 minutes, until internal temperature reaches 155°.Step 5In large bowl, whisk together lemon juice and remaining olive oil; season with salt and pepper. Gently toss with mixed greens until lightly coated.Step 6Serve sausages with couscous, salad, and Dijon-apricot mustard.
