Ingredients

1 1/2 lb. baby new potatoes, halved

kosher salt

1/4 c. mayonnaise

1/2 c. chopped fresh cilantro, plus more for garnish

Freshly ground black pepper

Juice and zest of 1 lime

1/2 tsp. crushed red pepper flakes

1 lb. kielbasa

4 hot dog buns

Preparation

Step 1In a large pot place potatoes in cold water and bring to a boil. Season with salt and stir. Simmer until fork tender, 10 minutes.Step 2Preheat grill or grill pan. Meanwhile, in a large bowl mix mayonnaise, cilantro, salt, pepper, lime juice and zest, and red pepper flakes. Drain and run under cold water until cooled. Toss potatoes with dressing.Step 3Cut kielbasa in half, and again in half lengthwise into 4 equal pieces. Grill kielbasa for 2 minutes on each side. Transfer to a plate and let rest for one minute. Step 4Serve kielbasa on hot dog buns with a side of potato salad; garnish with cilantro. If desired, drizzle dressing from potato salad on kielbasa and top with cilantro, or serve with your favorite condiment.
