Ingredients
1 baguette, cut into 1/2" slices
5 tbsp. extra-virgin olive oil, divided
1 (8-oz.) brie wheel
1 small clove garlic, cut into thin matchsticks
2 tbsp. dry white wine
4 thyme sprigs
1/4 tsp. kosher salt
Freshly ground black pepper
Preparation
Step 1Prepare a grill for high heat. Brush both sides of baguette slices with 4 tablespoons oil. Grill bread, turning once, until crisp and lightly charred, 20 to 30 seconds per side. Transfer to a plate. Step 2Place brie in a cast-iron skillet. Using a sharp knife, score top of rind in a crisscross pattern. Stuff half of garlic into slits; sprinkle remaining garlic over top. Drizzle brie with wine and remaining 1 tablespoon oil. Top with thyme and season with salt and pepper.Step 3Place cast-iron skillet on grill rack and close lid. Grill until cheese is warmed through and feels melted and gooey in the middle, 8 to 10 minutes.Step 4Serve brie in skillet with toast alongside.
Our top tip? Don’t be afraid to really push the garlic slices down inside the score marks you’ve made in the brie rind: The garlic will melt into the brie as it’s grilling, seasoning it from the inside out. Here, we’re putting it in a cast-iron pan and grilling over direct heat. We like this option because it allows us to score the top of the brie without worrying about the cheese oozing out onto the grill…and because we can top the brie with lots of fun aromatics (like wine!) without worrying about losing them between the grill grates. Can I eat the rind? Yes, absolutely—the rind is 100% edible. It tends to have a stronger flavor than the interior of the brie, though, so if you’re not a fan of stronger cheese flavors, you might want to avoid it. What do I serve with this? We love these grilled crostini, but you could also go with crackers or even some fruit. Sliced apples or pears, or even some grapes, would be great. I don’t have a grill! Can I bake this? Absolutely.
